The story of candy floss (or cotton candy as it’s known in the US) begins in the 19th century. While sugar-spun confections existed in earlier centuries—often painstakingly crafted by skilled chefs—it wasn’t until the invention of a mechanical candy floss machine that this sweet treat became widely available.

One of the earliest mentions of spun sugar comes from Italy in the 1400s, where skilled chefs would melt sugar and pull it into delicate strands. This process was incredibly labour-intensive and reserved for the wealthy, as only trained professionals could create it.

The Accidental Inventors: A Dentist & A Confectioner

Surprisingly, one of the first commercial candy floss machines was co-invented by a dentist! In 1897, American dentist William Morrison teamed up with confectioner John C. Wharton to create a machine that would spin heated sugar into thin, airy threads. They called their invention “Fairy Floss”, and in 1904, they introduced it to the world at the St. Louis World’s Fair.

The reaction? Over 68,000 boxes were sold, proving it to be a massive hit! The sweet, melt-in-your-mouth experience combined with the novelty of watching it being made created an instant fairground sensation.

How Candy Floss Machines Work

Morrison and Wharton’s invention set the foundation for modern candy floss machines. But how do these magical machines work?

Sugar is heated inside a central spinning head until it melts into a liquid.
The machine then forces the liquid sugar through tiny holes using centrifugal force.
As the sugar meets the air, it cools instantly, forming fine threads.
The operator twirls a stick around the inside of the machine, gathering the sugar strands into the fluffy treat we all know and love.

The Rise of Candy Floss in the UK

Candy floss soon made its way across the Atlantic, becoming a fairground staple in the UK. The name “Fairy Floss” didn’t stick, and by the mid-20th century the British had adopted the name “Candy Floss”.

It became a must-have treat at fairgrounds, carnivals, and seaside resorts, much like the iconic sticks of rock found in Blackpool.
Over time, machines became smaller and more efficient, making it easier for vendors to produce candy floss in larger quantities.
The treat also found its way into cinemas, funfairs, and theme parks, solidifying its place as a nostalgic part of British childhood.

Originally, candy floss only came in one colour: white. However, with advancements in flavouring and colouring, we now have a whole rainbow of options:
